Jerk Juicy BBQ Offers Variety of Smoked Meats

In July of 2021, Jerk Juicy BBQ opened up to customers offering a wide range of different smoked meats to take home and enjoy. Now seven months later, the take-home restaurant has become a hit for Yelm and its residents.

Brian Pillsbury, the owner of Jerk Juicy BBQ, has 35 years of experience as a chef and pitmaster. The COVID-19 pandemic led Pillsbury to a life-altering decision, which brought his business to fruition.

“I was an executive chef up north and the pandemic shut us down. I figured if I was to open a take out restaurant, that I could do that, since at the time sit-down restaurants were restricted,” said Pillsbury. “I still had to make money to provide and it led me to opening Jerk Juicy. It felt like the right timing.”

Jerk Juicy BBQ won top honors by voters in the 2021 Best of the Nisqually Valley contest. The menu lists several meats including chicken, pork, sausage, and ribs as well as their best-selling brisket. The restaurant smokes its meats daily and offers hefty portion sizes.

“We’ve been doing pretty dang good since we opened,” said Pillsbury. “I do the best that I can and I’m glad everybody likes it. The community has accepted us. I get a lot of compliments on what I do.”

Pillsbury offers samples to customers ahead of ordering, so they can get a taste of what they’ll be having. All of his food is homemade from scratch, including its barbecue sauce.

Jerk Juicy also offers unique specials, which usually tend to be hits, Pillsbury said. Some of the best selling specials from the restaurant include a brisket mac and cheese burrito and a pulled pork mashed potato bowl. But Pillsbury is still experimenting with his menu. He noted that next week Jerk Juicy will start to offer loaded pulled pork baked potatoes.



Pillsbury is currently in discussions to open the restaurant on weekends for breakfast.

“We’re really thinking about offering a BBQ style breakfast in the future,” he said.

Two of the items he has planned for the breakfast menu include a pulled pork eggs benedict and pulled pork biscuits and gravy.

Pillsbury continues to tweak his menu and is in a constant search to add more items. He noted the specials the restaurant serves will continue.

“We hope people keep coming back for more. I put my blood, sweat and tears into it. I cook every day,” said Pillsbury. “I experiment to try and make things that people have never had, but people are liking what we’re doing and I hope we can stay busy or even busier.”

Jerky Juicy also offers catering services on Saturdays. Prices for catering depends on how many people will be in attendance, as well as what they’re cooking.
